Clam Chowder at Castle Hill Inn 590 Ocean Avenue, Newport

Not only is clam chowder the epitome of comfort, but it's also a Newport staple, which means we know how to make it and we know how to make it exceptionally well.


But just for you, we'll share the recipe.

  • 1 quart chopped clams
  • 2 stalks celery, washed and diced
  • 4 yukon gold potatoes, peeled and diced small
  • 1 medium Spanish onion, small diced
  • 2 cups chopped bacon, small diced cup dry sherry
  • 1 quart clam juice
  • 2 cups whole milk pound ap flour pound
  • unsalted butter
  • Kosher salt to taste
  • Ground white pepper to taste
  • Fresh dill to taste

Directions: In a large stock pot over medium heat add butter, bacon and saute until crispy. Add onions and celery, saute until softened, but not browned. Add flour and create a roux. Cook until flour absorbs all liquid. Add clam juice and potatoes, make sure potatoes are submerged in the pot, cook until tender and add clams. Bring to a boil, reduce heat to a low simmer add sherry and milk. Adjust seasoning with salt, pepper and fresh dill.
